Recently, I had the pleasure of stopping by Carla Hall’s food truck take over, where she was introducing the world to her latest endeavor, a restaurant that will specialize in a Nashville staple, “Hot Chicken”.

While I was mildly familiar with this concept because my brother use to live in Nashville, I still had never had the chance to try it first hand.

So, who exactly is Carla Hall and what is “Hot Chicken” ???

Well, Carla who was born and raised in Nashville, has made a career out of cooking Southern cuisine on television, appearing on multiple seasons of Top Chef and co-hosting ABC’s The Chew. She’s planning to open her first restaurant — a Southern comfort food kitchen in New York City specializing in Nashville hot chicken — and is turning to the public for help. She is working on crowd funding $250,000 in donations through a Kickstarter Campaign for operating costs. With less than a weeks to go, Hall has raised just over $190,000.

As for Hot Chicken, Hall explains it as being, “Hot chicken is typically a Southern fried chicken tossed in a hot oil. We make that oil with the canola oil, and then it has cayenne, smoked paprika, garlic powder and a little bit of sugar, and it goes from mildly hot to fiery hot.”

At the food truck, I had totally planned to purchase and try whatever she was offering. However, I was pleasantly surprised to find out, EVERYTHING was on Carla a.k.a. FREE.  You could opt to sample it all (chicken, mac & cheese, collard greens and corn bread) or a straight vegetarian plate.



Let me just tell you…that chicken was GOOD! Matter of fact, all of the food was really delicious. But that chicken tho…I can honestly say that was some of the best fried chicken I have ever had and you know I consider myself a fried chicken whisperer!

Mid-bite they tried to catch me with my “hot chicken” face but I tried to hold it together…





Carla was really sweet and I can’t wait for her restaurant to come to NYC. You still have time to contribute via Kickstarter and she has some really great incentives for those who do.

    Great concept to offer sample plates. That’s a woman who is confident in her food. The comeback is where the money is at.
